Judi’s Broccoli Mandarin Salad

Serves at least six.

1 tsp

corn starch

1 tsp

dry mustard

¼ cup

white wine vinegar

¼ cup

In a saucepan, whisk together eggs, sugar, corn starch, and dry mustard. Add vinegar and water and cook slowly until thickened. Remove from heat and stir in mayonnaise. Cool.

fresh broccoli florets

½ cup


8 slices

bacon, cooked and chopped

2 cups

sliced, fresh mushrooms

½ cup

toasted slivered almonds

10 oz. can

mandarin oranges, drained


red onion, sliced






While dressing is cooling, cut up the broccoli, wash the raisins, cook and cut up the bacon, slice the mushrooms, toast the almonds, and slice the onion.

Then, marinate broccoli in dressing for several hours. Combine other ingredients except oranges. Just before serving, combine broccoli, other ingredients and  drained orange slices. Toss well and serve.
