Judi’s Broccoli Mandarin Salad
Judi Riley made this fantastic dish for us at a fun family dinner. In her own words: “This salad is delicious. It has a lot of ingredients, and is almost a meal in itself. It takes time to prepare but it's worth it.” Judi Riley
Serves at least six.
Dressing 2 eggs ½ cup sugar 1 tsp corn starch 1 tsp dry mustard ¼ cup white wine vinegar ¼ cup water ½ cup mayonaisse
white wine vinegar
In a saucepan, whisk together eggs, sugar, corn starch, and dry mustard. Add vinegar and water and cook slowly until thickened. Remove from heat and stir in mayonnaise. Cool.
While dressing is cooling, cut up the broccoli, wash the raisins, cook and cut up the bacon, slice the mushrooms, toast the almonds, and slice the onion.
